It's easy to make and can be prepared with light ingredients, from summer-fresh produce and lean cuts of meat down to a homemade lower-fat sandwich spread (see Health Matters, below). The following recipes help you to build better sandwiches by leaving out some of the fat and calories while keeping all the flavor you want. Add a cold drink and some fruit, and you'll have the best no-stress summer supper ever. — Adapted from an article by Marie Simmons, Bon Appétit, August 2002 HEALTH MATTERS Light mayonnaise, with half the fat and calories of regular mayo, receives extra-high marks when combined with other ingredients to make delicious sandwich spreads, as in the recipes that follow. Cover these mixtures tightly and keep chilled for up to one week. BASIL AND GARLIC MAYONNAISE Combine 1/2 cup (packed) torn basil leaves, 1/2 peeled garlic clove, and 1 1/2 teaspoons red wine vinegar in a processor. Blend until basil is finely chopped. Add 1/2 cup light mayonnaise and blend until smooth. ORANGE AND GINGER MAYONNAISE Whisk 1/2 cup light mayonnaise, 1 teaspoon grated orange peel, 2 teaspoons minced peeled fresh ginger, and 1 tablespoon fresh lime juice in a small bowl to blend. SPICY CHIPOTLE CHILI MAYONNAISE In a small bowl, whisk 1/2 cup light mayonnaise, 1 to 2 teaspoons (depending on desired spiciness) minced chipotle chili in adobo sauce, and 1 teaspoon ground cumin to blend. ===== Language is an expression of thought.
