Holiday Party Nuts

Prep Time: 15 minutes

 

No one can resist these crunchy munchies -- peanuts,

pistachios, pumpkin seeds, and pretzel nuggets get a

kick from a sprinkle of curry powder.

 

Ingredients

 

1/2 cup light-colored corn syrup

6 tablespoons butter or margarine

1/3 cup packed brown sugar

2 tablespoons curry powder

1-1/4 teaspoons salt

1/4 teaspoon ground red pepper

1 can (12 oz.) unsalted cocktail peanuts

1 cup unsalted shelled pistachios

1 cup shelled pumpkin seeds

1 8-ounce bag whole blanched almonds

1 7-ounce bag pretzel nuggets

 

Directions:

 

1. Heat oven to 300 degrees F. Grease the bottom of a

broiler pan or large roasting pan with vegetable

shortening.

2. Combine corn syrup, butter, brown sugar, curry

powder, salt, and red pepper in medium saucepan. Heat

over medium heat, stirring occasionally, until butter

is melted and sugar is dissolved, 3 minutes.

3. Meanwhile, toss together remaining ingredients on

the prepared pan with a large spoon. Pour syrup over

nut mixture and toss again to coat. Bake 38 to 43

minutes, stirring once halfway through, until mixture

is deep golden brown.

4. Arrange a 30-inch long strip of foil on a smooth

work surface (this will avoid staining your counter

with the curry powder). Cover foil with a 30-inch long

piece of waxed paper.

5. Scrape nut mixture onto waxed paper with an oiled

rubber spatula, then spread evenly to cover the paper.

Cool completely. Break up into chunks. Store in an

airtight container at room temperature up to 1 month.

Makes 36 (1/4-cup) servings.
