The delightful addition of rosemary is unexpected and makes these cookies a unique gift. Ingredients 1/2 cup butter, softened (no substitutes) 1/2 cup sugar 1 large egg white, lightly beaten 2 tablespoons minced fresh rosemary 2 tablespoons grated lemon or orange peel 1/2 teaspoon vanilla extract 1 cup all-purpose flour Directions: 1. Beat butter and sugar in a large mixer bowl on medium-high speed until creamy. Beat in egg white, rosemary, peel and vanilla. Reduce speed to low; gradually beat in flour just until combined. 2. With lightly floured hands, shape dough into a 10x1-1/2-inch log. Wrap well and refrigerate 4 hours or overnight. 3. Heat oven to 350 degrees F. Unwrap log; cut dough into 1/4-inch-thick slices. Place slices 1/2-inch apart on 2 large ungreased cookie sheets. Bake 12 to 15 minutes until edges of cookies are lightly golden. Transfer cookies to wire racks and cool completely. Makes 3-1/2 dozen wafers.
