Garlic Cheese Grits

Prep Time: 25 min.

 

Grits, often referred to as " the potato of the South, "

became a staple in the hot Southeast because they

retained their keeping quality in the warm humid

climate.

 

 

Ingredients

 

1 cup quick-cooking grits

1-1/2 cups shredded cheddar cheese (6 ounces)

1/4 cup butter or margarine

1/2 teaspoon salt

1/2 teaspoon garlic powder or 2 to 3 cloves garlic,

minced

Dash ground red pepper

2 eggs, beaten

Snipped fresh parsley

 

Directions:

 

1. Preheat oven to 350 degrees F. Prepare grits

according to package directions. Add 1 cup of the

cheese, the butter, salt, garlic powder or garlic, and

ground red pepper; stir until cheese and butter are

melted. Gradually stir 1/2 cup of hot mixture into

beaten eggs. Stir egg mixture into remaining grits.

Pour into a greased 2-quart casserole. Top with

remaining cheese.

2. Bake for 50 to 60 minutes or until set. Let stand

10 minutes before serving. Sprinkle with parsley.

Makes 6 to 8 servings.
