Guest guest Posted December 6, 2002 Report Share Posted December 6, 2002 Tomato-Onion Salsa Vinegar-based relish is often served as an accompaniment to torn fresh greens or wilted cooked greens. 3 large tomatoes, seeded and chopped (about 2 cups) 2/3 cup chopped green onions 2 tablespoons chopped pepperoncini peppers 2 tablespoons vinegar 1 teaspoon finely chopped jalapeno pepper* 1/2 teaspoon salt Torn greens Combine tomatoes, green onions, pepperoncini peppers, vinegar, jalapeno pepper, and salt; mix lightly. Cover and chill for 2 to 48 hours. Serve over greens. Makes 6 to 8 servings. *Note: Because chili peppers contain very pungent oils, be sure to protect your hands when preparing them. Put gloves or sandwich bags over your hands so your skin doesn't come in contact with the peppers. Always wash your hands and nails thoroughly in hot soapy water after handling chili peppers.
