Ingredients 4 - medium vine-ripened tomatoes 1/2 cup (2 1/2 oz/75 g) chopped onion 2 tablespoons thinly sliced green onions 1-2 tablespoons seeded and minced jalapeño pepper 1 tablespoon chopped fresh cilantro - - Juice of 1 lime 1 tablespoon water 1/8 teaspoon sea salt Preparation - Estimated cooking time: Under 30 minutes - 1 To make tomatoes easy to peel, bring a saucepan of water to a boil. Core tomatoes and cut an X on the bottom. Place in boiling water for 1 minute. Remove to a bowl of cold water. 2 When tomatoes are cool enough to handle, remove skins. Cut tomatoes in half and remove seeds. 3 Dice tomatoes. 4 In a bowl, combine diced tomatoes, onions, green onions, jalapeños, cilantro, lime juice, water and salt.
