Guest guest Posted December 9, 2002 Report Share Posted December 9, 2002 SESAME BOK CHOY AND CARROT STIR-FRY Makes 2 servings 1 tsp dark sesame oil 4 cloves garlic, minced 3 carrots, cut into diagonal 1/4 " slices 1/2 cup chopped green onions 5 cups bok choy, cut into 1/2 " pieces 1/4 cup vegetable stock 2 tsp ginger root, minced 1 tsp granulated sugar 2 T toasted sesame seeds 3 cups cooked quinoa Heat oil over medium heat. Add garlic, carrots and onions; stir-fry 3 minutes. Add bok choy and stir-fry 2 minutes. Stir in stock, ginger and sugar. Simmer 5 minutes.
