Guest guest Posted December 13, 2002 Report Share Posted December 13, 2002 Corn Chowder INGREDIENTS: 2 lbs White potatoes, medium diced 1 Bay leaf 3/4 lbs Onions, finely diced 3 T Butter 1 Green bell pepper, finely diced 2 t Cumin seeds 4 Celery ribs, finely diced 3 T Flour 1/2 t Sage 1/2 t White pepper 2 c Milk 1 lb Corn, frozen or kernels from 3 ears of corn Parsley, finely chopped PREPARATION METHOD Boil potatoes until just tender in one quart of water with bay leaf. Sauté onions, peppers, celery and cumin in butter until onions are transparent. Add sage, pepper and flour to the onion mixture with some of the potato water and stir to make a paste. Add the potatoes and the rest of the potato water and heat. Finally, add the milk and the corn. Heat thoroughly and garnish with parsley. Makes 14 servings.
