Sesame-and-Poppy-Seed Dinner Rolls

 

These old-fashioned dinner rolls are just like Mom

used to make. The secret ingredient? Rye flour!

 

 

2 packages rapid-rise yeast

1-1/2 cups warm water (105 degrees F. to 115

degrees F.), divided

2 teaspoons sugar

1/4 cup honey

1/4 cup butter or margarine, melted

4 to 4-1/4 cups bread or all-purpose flour

1/2 cup rye flour

1-1/2 teaspoons salt

1 large egg white, lightly beaten

1 to 2 tablespoons sesame seeds or poppy seeds

 

 

 

1 . Combine yeast, 1/2 cup of the warm water and the

sugar in small bowl; let stand 10 minutes or until

bubbly. Stir in honey and butter.

2. Pulse 4 cups of the bread flour, the rye flour and

salt in food processor until combined. With machine

running, pour in yeast mixture through feed tube until

blended. Add remaining 1 cup warm water, pulsing until

dough forms a ball. Transfer to lightly floured

surface. Knead 7 or 8 times or until smooth, adding

remaining 1/4 cup flour as necessary. Place dough in

lightly greased bowl; cover. Let rise in warm,

draft-free place until doubled in bulk (45 minutes).

3. Heat oven to 375 degrees F. Lightly grease eighteen

2-3/4-inch muffin-pan cups. Punch down dough; transfer

to lightly floured surface. Divide into 18 pieces.

Roll each piece into a ball. Transfer to prepared

cups. Lightly brush tops with egg white; sprinkle with

sesame seeds or poppy seeds. Let rise until almost

doubled in bulk (15 minutes).

4. Bake rolls 15 to 18 minutes or until one roll

sounds hollow when tapped on the bottom. Unmold rolls

on wire racks. Serve warm. Makes 18 rolls.

Make-Ahead Tip: Prepare and bake rolls. Cool. Wrap in

foil and freeze up to 2 weeks. Thaw 45 minutes.

Reheat, covered, in 350 degree F. oven 10 minutes.
