Ingredients 15 - large vine-ripened tomatoes 3 tablespoons chopped fresh garlic 3 tablespoons chopped fresh basil or 2 teaspoons dried 1/8 teaspoon sea salt - - Canola oil cooking spray Preparation - Estimated cooking time: 30-60 minutes - 1 Bring a large pot of water to a boil. 2 Core tomatoes and cut an X on the bottom side with a paring knife. 3 Place tomatoes in boiling water for 1 to 2 minutes to loosen skin. 4 Remove to a bowl of cold water until they're cool enough to handle. 5 Peel tomatoes, cut in half and squeeze each over a bowl to remove seeds. Discard the seeds. 6 In batches, place tomatoes in a blender or food processor and purée. 7 Spray a large saucepan once with cooking spray and place over low heat. 8 Add chopped garlic to the pan and dried basil, if using, and cook for 1 minute. 9 Add puréed tomatoes and cook for 20 minutes, stirring occasionally. 10 Add fresh basil and salt when sauce has finished cooking.
