Guest guest Posted February 3, 2003 Report Share Posted February 3, 2003 Hoi Sin Tofu And Vegetables Source: veganforlife > Ingredients: > 1 block (375g) firm organic tofu > Extra virgin olive oil (for frying) > 1/2 teaspoon sesame oil > 2.5 cm (1 inch) fresh ginger root > 2 onions > 2 heads of broccoli > 1 red pepper > 1 handful fresh button mushrooms > 2 tablespoons hoi sin sauce > 2 tablespoons dry sherry > 1 1/2 tablespoons soy sauce > 2 tablespoons brown vinegar > 1 cup water > 2 vegetable stock cubes cornflour Method: 1. Wash all vegetables thoroughly in cold water. Slice pepper and mushrooms > finely. Peel and chop onions. Cut broccoli into small flowerets, and slice > stem. Peel and grate green ginger root. 2. Cut tofu into cubes (about 2 cm x 2.cm), and toss lightly in cornflour. Heat a small > amount of olive oil in wok, and cook tofu until golden brown (it helps to do > this in batches). Remove from wok and drain on paper towel. 3. Add ginger to wok (add a little extra oil if necessary), and heat for one minute, moving > constantly in the wok. Add onion, cook on high heat for one minute. Next, > add the pepper, broccoli and mushrooms to the wok. Toss quickly in the pan > for a few minutes until vegetables start to soften. 4. Add well-combined hoi sin sauce, sherry, soy sauce, vinegar, water, crumbled stock > cubes, sesame oil and 3 teaspoons of cornflour to the wok. Mix thoroughly. 5. Return tofu to the wok and toss with the vegetables and sauce until the sauce boils and > thickens. Continue to toss for another 3 minutes. Serves 4-6.
