Fresh Apple Cake

 

Ingredients

1 cup vegetable oil

1 1/2 cups sugar

2 eggs

2 1/2 cups flour

1 teaspoon salt

1 teaspoon baking soda

1 1/2 teaspoons cinnamon

1 teaspoon baking powder

4 cups finely chopped apple

1/2 cup coconut

1/2 teaspoon vanilla

Method

 

Preheat Oven 350

 

Beat together oil, sugar, eggs and vanilla.

 

Add apples, and set aside.

 

Sift together flour, salt, baking soda, baking powder, and cinnamon.

 

Add dry ingredients to apple mixture. Mix well.

 

Add coconut.

 

 

Spread into a greased and floured 9 by 13 inch pan or tow 8 by 8 inch pans.

 

Bake for 35 to 40 minutes. Cool in pan.

 

For individual cakes, divide mixture by filling 18 to 24 cupcake/muffin tins 3/4

full.

 

Use paper liners. Bake these for 30 minutes.
