Confetti Corn Muffins

Ingredients:

2 pkg. (8-1/2 oz. each) corn muffin mix

 

1/4 tsp. ground red pepper

 

1 can (11 oz.) whole kernel corn, drained

 

1 cup BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese

 

1/4 cup milk

 

2 eggs

 

2 green onions, sliced

 

1 medium red bell pepper, finely chopped

 

 

Preparation:

Mix muffin mixes and ground red pepper in small bowl; set aside. Mix remaining

ingredients in large bowl. Add muffin mixture to corn mixture; mix well.

 

Spoon batter into paper-lined muffin pan, using 1/4-cup measure.

 

Bake at 400°F for 25 minutes or until golden brown.

 

 

Nutritional Bonus

For a colorful twist on traditional corn muffins, spike the batter with chopped

red pepper, a good source of vitamin C.
