A declining seasoning can greatly alter any recipe. Green leafy herbs (basil, parsley, thyme) will begin to fade in color with age. Red spices (paprika, cayenne, chili powder) will begin to change to a brownish tone. Try crushing a small amount of the herb between your fingers. If you don't smell a full aroma, the flavoring may have lost its punch. Purchasing only small amounts of spices can help prevent loss.
