SoyFull Chili

Ingredients:

2 medium bell peppers (red, yellow or green), coarsely chopped

 

1 medium onion, chopped (about 1/2 cup)

 

2 cloves garlic, minced

 

2 tsp. vegetable oil

 

1 can (15 oz.) black beans, rinsed, drained

 

1 can (15 oz.) chili beans in sauce

 

1 can (15 oz.) tomato sauce

 

1 can (14-1/2 oz.) diced tomatoes

 

1 pkg. (12 oz.) frozen BOCA Meatless Ground Burger

 

1 can (4 oz.) chopped green chilies, drained

 

1 Tbsp. chili powder

 

1/2 tsp. ground cumin

 

 

Preparation:

Cook peppers, onion and garlic in oil in large saucepan on medium-high heat 2

minutes, stirring frequently. Stir in ground burger; cook 2 minutes, stirring

occasionally.

 

Add remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer 30

minutes, stirring occasionally.

 

Serve with your favorite chili toppings, if desired.
