Guest guest Posted March 17, 2003 Report Share Posted March 17, 2003 Vegetarian Stuffed Peppers Prep time : 20 min Ready in :40 min Ingredients: 4 medium green peppers, parboiled 1-1/2 cups chopped mushrooms 1/2 cup chopped onions 1/2 cup chopped red peppers 2 Tbsp. margarine or butter 1/2 cup CREAM OF WHEAT Cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked 1 can (15 oz.) garbanzo beans, drained 1 egg, slightly beaten 1/2 tsp. dried thyme leaves 1-1/2 cups KRAFT Shredded Cheddar Cheese, divided Preparation: Cut green peppers in half lengthwise. Scoop out pulp and seeds; discard. Place pepper shells in 13x9-inch baking pan. Cook mushrooms, onions and red peppers in margarine in large skillet until tender. Add cereal, beans, egg, thyme and 1 cup of the cheese; mix well. Spoon evenly into pepper shells; sprinkle with remaining 1/2 cup cheese.
