This is great news for people who can't eat wheat. Some of these new pastas are more nutritious than pasta made from wheat. For example, lentil pasta has 13g protein, 30% RDA iron, and 33g carbohydrates, as compared to wheat pasta with 2g protein, 10% RDA iron, and 41g carbohydrates in a 2oz. serving. You can use lentil pasta in your favorite pasta recipes or try this recipe: Bring 2 quarts of water to a boil and add 1 Tbsp. olive oil and 1 tsp. salt. Pour in 1/2 pound of lentil pasta and stir it until the water returns to a vigorous boil, and then turn down the heat. Lentil pasta is slightly more delicate and sticky than wheat pasta, so remember to stir frequently and don't overcook it. Meanwhile, in a skillet with 1 Tbsp oil, crumble in 1 block of tofu and cook until lightly browned. Add some diced mushrooms and yellow squash and sauté. Pour in spaghetti sauce and season with nutritional yeast.
