Guest guest Posted March 19, 2003 Report Share Posted March 19, 2003 Mozzarella Manicotti 12 large manicotti shells 4 cups shredded mozzarella cheese, divided 2 cups ricotta cheese 6 tablespoons fresh basil, chopped, or 2 tablespoons dried basil 1 jar (26 ounces) prepared spaghetti sauce, divided 1/2 cup grated Parmesan or Romano cheese Preheat oven to 350F. Spray a 13x9-inch baking pan with vegetable cooking spray. Cook manicotti according to package directions. Drain; rinse with cool water. Dry manicotti on paper towels. For filling, in a medium bowl, mix 3 cups of mozzarella with ricotta and basil. Using a teaspoon, carefully stuff manicotti with cheese mixture. Spoon 2 cups spaghetti sauce in prepared baking dish. Arrange stuffed manicotti over sauce. Pour remaining sauce over top. Sprinkle with remaining mozzarella. Bake manicotti for 15 minutes. Sprinkle with Parmesan. Bake for 10 minutes longer. Serve immediately.
