Guest guest Posted March 27, 2003 Report Share Posted March 27, 2003 Wheat-Free Cookies Wet ingredients: 3/4-cup oil 1/4 cup white sugar 1/4-cup brown sugar 1 egg 1/4-cup banana 1/2 tsp. vanilla 1 tsp. molasses Dry ingredients: 3/4-cup oat flour 1/2 tsp backing soda 1 tsp xantham gum (used to add volume and viscosity to bread and other gluten-free baked goods, sold at health food stores) 1/2 tsp. cinnamon 1 1/4 cups apple cinnamon instant oatmeal 1/4-cup raisins Mix all the wet ingredients in one bowl. Mix the oat flour with the baking soda and xantham gum in a separate bowl. Add the rest of the dry ingredients and mix well. Combine the wet and dry ingredients and mix until moist. Drop by tablespoonfuls onto a lightly greased pan (a lasagna dish is my secret to perfect golden yet moist cookies). Cook at 350 degrees F for 16-20 minutes.
