Guest guest Posted April 2, 2003 Report Share Posted April 2, 2003 Easter Eggs Makes: 60 eggs Ingredients 2 pounds confectioners' sugar 1/4 pound margarine, softened 1 (8 ounce) package cream cheese 2 teaspoons vanilla extract 12 ounces peanut butter 1 pound flaked coconut 4 cups semisweet chocolate chips 2 tablespoons shortening Directions 1. In a mixing bowl, combine sugar, margarine, cream cheese and vanilla extract. Divide the batter in half and place each half of the batter in a bowl on its own. Stir peanut butter into one of the bowls and coconut into the second. 2. Using your hands, mold the dough into egg-shapes and arrange the forms on cookie sheets. Place the eggs in the freezer until frozen. 3. Once the eggs have frozen, melt the chocolate and shortening in the top of a double-boiler. Dip the eggs into the chocolate until coated. Place the eggs on wax paper lined cookie sheets and return to the freezer to harden. Green and Blacks Maya Gold Easter Egg (organic and fair traded) - about £2.89 from health food shops and some supermarkets - a good sized egg, boxed and wrapped in gold foil - this wins our "best buy" though the chocolate is quite strong tasting which some children might not like Green and Black's Dark Chocolate Egg Kinnerton Eggs available this year (2005):Simpsons Dairy Free Egg available in Wilkinsons of Jersey, Sugro Buying Group and P & H McLane LtdLuxury Dairy Free Egg and Bar at Waitrose, Woolworth’s, Wilkinsons of Jersey and P & H McLaneSimpsons/Groovy Chick Dairy Free Egg (displayed in a mixed case) from Sainsbury’s, Waitrose and Woolworth’s Stamp Collection Organic Dairy Free Bunny (larger Tesco stores have this) Siesta carob egg and foil wrapped chuckle bunnies (health food shops) Walkers Chocolates produce a pack of 3 mint eggs (about the size of a creme egg) - sold for around 59p in Wilkies and other discount shops. Fun Bunnies - orange flavour carob bunnies - available in many health food shops at £1.50 for a pack of three Lindt solid 70% cocoa mini eggs (available in many supermarkets) - gold foil wrapping (there is a chance of cross contamination with most companies that make milk chocolate too - this applies to Lindt and Elizabeth Shaw below). Elizabeth Shaw - 365g Mint Crisp Egg and the 440g Dark Chocolate Egg with Mint Creams are free from dairy and egg ingredients. Whizzer's mini eggs (available in health food stores, some branches of Sainsbury's and the Veganstore below) - about 69p Booja Booja do a large egg with truffles for about £10 - the Hazelnut Crunch Rocher and Around Midnight Expresso varieties are vegan - available from health food shops and Animal Aid below. Why not celebrate with chocolate (at any time).
