The noodles are deep-fried by the manufacturer, who then forms the cooked noodles into a round shape. Thus, this particular brand of noodles is time-consuming for the manufacturer to make and possibly the most expensive noodles in the Chinese pantry. This is one reason that the appearance of this dish is rare on family or restaurant tables. 12 oz. e-fu noodles 2 Tbs. vegetable oil 1 tsp. minced garlic 4 oz. shiitake mushrooms, thinly sliced 1 1/2 cups water 2 Tbs. soy sauce 2 Tbs. mushroom soy sauce 1. Heat large pot of water over medium-high heat, and when boiling, add e-fu noodles, and cook for 5 to 8 minutes. Remove from heat, drain and set aside. 2. Heat wok over medium-high heat, and when hot, add oil and garlic and stir-fry 30 seconds. Add mushrooms, and stir-fry 1 to 2 minutes or until browned. 3. Add water, soy sauce, mushroom soy sauce and noodles, and cook for 1 to 2 minutes. Remove from heat, and serve. PER serving: 350 CAL; 8 G PROT; 23 G TOTAL FAT (4 SAT.
