Guest guest Posted April 5, 2003 Report Share Posted April 5, 2003 Wild Cranberry Orange Muffins INGREDIENTS: 2 c all purpose flour 1/2 c sugar 2 t baking powder 1/2 t salt 1 c Great Lakes wild cranberries, drained 2 T freshly grated orange peel 1/2 c pecans or walnuts, chopped 2 eggs 1/2 c orange juice 1/2 c vegetable oil PREPARATION METHOD 1. Mix cranberries and orange peel and set aside. 2. In large bowl, combine flour, sugar, baking powder and salt. 3. In small bowl, combine egg, orange juice and oil. Add all at once to the flour mixture. Fold in cranberries and nuts. 4. Spoon batter into greased or paper-lined muffin cups. Fill muffins cups about 2/3 full.
