Guest guest Posted April 11, 2003 Report Share Posted April 11, 2003 Garden Potato Salad This recipe is a satisfying combination of crunchy celery, crisp red pepper, cubed potatoes, and fresh string beans, which are fat free, a good source of fiber, and a good source of the antioxidant vitamin C. INGREDIENTS: 6 medium red Maine potatoes, cubed 3/4 c diced celery 1 1/2 c broccoli florets 3/4 c green beans (blanched) 1/2 c cauliflower 1/2 c red pepper 1/4 c fat free Italian salad dressing 1/2 c low fat mayonnaise 2 t fat free dry ranch dressing pepper to taste PREPARATION METHOD Cook potatoes - cool, add all other ingredients. Cover and chill. Makes 10 servings.
