Orange-Tofu Cream

Makes 1 1/2 Cups

 

 

16 oz. firm tofu

3 Tbs. vegetable oil

3 Tbs. maple syrup

1 Tbs. vanilla extract

1 tsp. salt

1/4 cup fresh orange juice

1 tsp. grated orange peel

1. In food processor or blender, combine all

ingredients and process until smooth and creamy.

Transfer to small bowl. Cover and refrigerate until

ready to use.

 

 

PER Tablespoon: 35 CAL; 1 G PROT; 2 G TOTAL FAT (0

SAT. FAT); 2 G CARB.; 0 MG CHOL; 96 MG SOD.; 0 G FIBER
