Preparing meals for all eight days of Passoveris always a challenge, but your task will be a little easier with these kosher substitutions up your sleeve. Instead of using flour to thicken gravy, use 1 egg yolk or 1 1/2 teaspoons of potato starch for every tablespoon of flour. In baking, use 3/4 cup potato starch or 1 cup cake meal for every cup of flour. For a one-ounce square of baking chocolate, substitute 3 tablespoons cocoa and 1 tablespoon shortening. Make kosher confectioners' sugar by putting 1 cup sugar in a blender and whirling until fine, then mixing in 1 1/2 teaspoons of potato starch. * Spring Centerpiece. Bring springtime to your table with a fun and simple Easter centerpiece. Incorporate the great outdoors! Buy some small pots of grass at a plant nursery (or sprout your own). Cluster several together in a rectangular basket and nestle colored eggs, toy chickies orbunnies, and fresh tulips into the grass. Tie a pastel satin ribbon around the basket as a finishing touch. Make sure the centerpiece doesn't get too tall or nobody will be able to see each other across the table! * Easter Leftovers. First order of business after the Easter egg hunt: what on earth are you going to do with all those eggs? After a round of good old-fashioned deviled eggs, whip up a batch of egg salad for lunches the next day. Get creative and add new flavors like olives,cumin and cilantro, dill, blue cheese and shredded apple, or fresh basil and chopped tomatoes. And when you grow weary of putting that leftover entree into sandwiches, chop it up and add it to a quiche or scrambled eggs, put it on a pizza with some pineapple, mix itinto pasta primavera, or stir it into your favorite soup. ===== *********** My Special Thought To You: There's A Blessin' In Pressin'....On The Upward Way!
