Guest guest Posted April 20, 2003 Report Share Posted April 20, 2003 Harira High Protein Ingredients: 11 cup onions, chopped 4 cups vegetable stock 1 tsp ground cinnamon 1 tsp turmeric 1 Tbsp grated fresh ginger root 1/8 tsp cayenne 1 cup carrots, peeled and diced 1/4 cup celery, diced 1 cup canned tomatoes, undrained, chopped 1 1/2 cups potatoes, diced Pinch of saffron 1 cup lentils, cooked (about 1/2 cup dried) 1 cup chickpeas, cooked and drained 1-2 Tbsp fresh cilantro, chopped 1 Tbsp fresh lemon juice Salt and ground pepper to taste lemon wedges (optional) Directions: In a covered pot, simmer the onions in 1 cup of the stock for 10 minutes. Combine the cinnamon, turmeric, ginger, and cayenne in a small bowl and add 2 to 3 tablespoons of the hot liquid to form a paste. Stir this paste into the pot along with the carrots, celery and the remaining stock. Bring to a boil, then lower the heat, cover and simmer for 5 minutes. Add the tomatoes and potatoes and continue to cook, covered, for 15 to 20 minutes, until the potatoes are tender. Crumble in the saffron. Stir in the lentils, chickpeas, cilantro, lemon juice and salt and pepper to taste. Reheat. Serve immediate with lemon wedges.
