Guest guest Posted April 20, 2003 Report Share Posted April 20, 2003 Brazilian Black Bean Soup High Protein Ingredients: 2 cups dry black beans 2 tsp salt 1 cup chopped onion 3 cloves crushed garlic 1 large carrot, chopped 1 stalk celery, chopped 1 tsp ground coriander 1 1/2 tsp ground cumin 2 oranges, peeled, seeded and sectioned 1/2 cup orange juice 1 Tbsp dry sherry 1/4 tsp black pepper 1/4 tsp red pepper 1/2 tsp fresh lemon juice Directions: Rinse beans. Cover them with water; let them soak several hours. Pour off excess water. Place in saucepan with 3 1/2 cups water and salt. Bring to a boil, cover and simmer 1 1/2 hours, over very low heat. Sauté onion, garlic, carrot, celery, coriander and cumin together. If necessary, add a little water to vegetables to steam them. When ready, add sautéed ingredients to beans. Let soup simmer over lowest possible heat. Add oranges, orange juice, sherry, black pepper, red pepper and lemon juice to soup. Give it a stir. Cover for 10 minutes. If you want it thicker, puree some or all in blender. Serve topped with sour cream or yogurt.
