Guest guest Posted April 20, 2003 Report Share Posted April 20, 2003 Black-Eyed Pea Salad Reduced Fat Ingredients: 2 Tbsp red wine vinegar 1 Tbsp olive oil 1/8 tsp pepper 2 1/2 cups drained canned black-eyed peas, rinsed 3/4 cup diced celery 1/4 cup chopped fresh cilantro 1/4 cup diced red bell pepper 1/4 cup diced green bell pepper 1/4 cup diced red onion Cilantro Sprigs (optional) Directions: Combine first 4 ingredients in a medium bowl; stir well. Add black-eyed peas and next 5 ingredients (peas through onion); stir well. Cover and chill at least 1 hour. Stir before serving. Garnish with cilantro sprigs, if desired. Servings: 4 Nutritional Information: 160 Calories (24% from fat), 4.4 g Fat, 7.7 g Protein, 23.7 g Carbohydrate, 1 g Fiber, 0 mg Cholesterol, 2.1 mg Iron, 542 mg Sodium, 48 mg Calcium.
