Here is a recipe for carob candy, but if you like, you can use cocoa powder

instead of the carob powder. I got this from another list, and it originally

called for wheat germ, which I substituted with ground flaxseeds to make it

GF.

 

 

Carob Balls

 

 

1 cup carob powder

1/3 cup nut butter of your choice

1/3 cup maple syrup (or rice syrup)

1/2 cup flaxseed meal (I buy Bob's Red Mill)

 

 

With a strong spoon mix all ingredients together well. It will seem very dry

at first, but keep mixing, and resist the temptation to add more wet

ingredients. It will eventually all get mixed together, and become slightly

sticky. When it reaches this point, gather some up in your hand (the amount

depends on the size you desire). Pack it together by hand, and roll between

palms to form a ball.

 

I really like these, and I have found that even people who say they don't

like carob like them, too. They make a nice after dinner treat, or a good,

quick snack anytime.

YUM! Thanks for this great recipe. The flax seed meal sounds like a wonderful

(and healthy) addition to this recipe.

CAROB BALLS

 

1/2 cup peanut butter (plain or chunky)

1/2 cup carob powder

1/2 cup honey

1 cup toasted wheat germ

1 cup chopped peanuts (or other nuts)

1 tsp vanilla extract (optional)

unsweetened shredded coconut

 

Mix together everything except the coconut. Form into walnut-sized

balls with wet hands. Roll in coconut and put onto a waxed-paper lined

cookie sheet. Refrigerate till firm. Store in the refrigerator or

freezer in a plastic bag.

 

Makes about 36
