Guest guest Posted April 21, 2002 Report Share Posted April 21, 2002 Here is a recipe for carob candy, but if you like, you can use cocoa powder instead of the carob powder. I got this from another list, and it originally called for wheat germ, which I substituted with ground flaxseeds to make it GF. Carob Balls 1 cup carob powder 1/3 cup nut butter of your choice 1/3 cup maple syrup (or rice syrup) 1/2 cup flaxseed meal (I buy Bob's Red Mill) With a strong spoon mix all ingredients together well. It will seem very dry at first, but keep mixing, and resist the temptation to add more wet ingredients. It will eventually all get mixed together, and become slightly sticky. When it reaches this point, gather some up in your hand (the amount depends on the size you desire). Pack it together by hand, and roll between palms to form a ball. I really like these, and I have found that even people who say they don't like carob like them, too. They make a nice after dinner treat, or a good, quick snack anytime. Form into walnut-sized balls with wet hands. Roll in coconut and put onto a waxed-paper lined cookie sheet. Refrigerate till firm. Store in the refrigerator or freezer in a plastic bag.
