Ingredients 1/2 cup (3 1/2 oz/100 g) natural cane sugar 1/8 teaspoon cream of tartar 1 - egg white 2 tablespoons water 1 1/2 teaspoons pure vanilla extract Preparation- Estimated cooking time: Under 30 minutes - 1 Place sugar, cream of tartar, egg white, water and vanilla in a metal mixing bowl set over a saucepan of simmering water. (The bottom of the bowl should not touch the water.) 2 Beat on low speed with an electric mixer for 4 minutes. Increase speed to high and beat for 4 minutes longer. 3 Remove from heat. Beat until fluffy, about 3 minutes.
