Spinach Au Gratin

 

1-Tablespoon Butter

1-Tablespoon Flour

1 cup half and half

10 ounce Spinach, chopped, frozen, defrosted and drained

1 cup Swiss cheese, grated

 

Melt the butter in a saucepan. Whisk in the flour and

cook for 5 minutes, stirring frequently. Stir in the half

and half. Simmer for 15 minutes. Stir in the spinach.

Place in a small casserole dish. Top with the cheese and

place under the broiler until lightly browned.

Serve immediately. Serves 4
