Cinco de Mayo

Cinco de Mayo--May 5th--has been an annual occasion for

jubilant celebration ever since this day in 1862, when the

Mexican army defeated the invading French army in the

Battle of Puebla, despite being horribly outnumbered.

This holiday is a delicious opportunity for everyone to

celebrate the culture and the flavors of Mexico, no matter

what their heritage may be.

So invite your friends and neighbors over for a backyard

fiesta and we'll get you geared up with recipes and hints

for homemade tortillas, tamales, enchiladas, fajitas,

margaritas, y mas! (and more!)

In digest #784, Kenia posted: " That's right, it is right around the corner.

What a fast moving year. I usually make all the traditional Mexican

dishes and drink a beer too.We have a Mexican potluck at my families

house... I better look in the Mexican food folder and find something

different. "

~ Hi Kenia. Isn't it fun that Cinco de Mayo is falling on a Friday

this year? i am going to have fun. i will share one of my favorite,

easy, tex-mex recipes that is so delicious and filling that nobody

ever complains there is no meat in it... even in my mostly omnivore

house. Maybe it will be something your family will enjoy, too. :)

Doesn't have to be boring -- depends on what you put on it! Salsa, sour

cream, cheese, chili.... Sounds good to me!
