Guest guest Posted May 3, 2003 Report Share Posted May 3, 2003 Grape And Pasta Saute This delicious pasta dish contains a variety of fruits and vegetables such as fresh mushrooms, crisp bell peppers, zesty onions and juicy grapes, which are cholesterol free and high in the antioxidant vitamin C. INGREDIENTS: 8 oz gnocchi or large shell pasta, cooked and drained 1/2 c onion, chopped 2 t olive oil 1 c pea pods, fresh or frozen 1 c bell pepper, red or yellow, cubed 1 c mushrooms, sliced 1/2 t oregano, dried 2 c grapes, seedless garlic salt & pepper to taste PREPARATION METHOD Saute in oil in non-stick skillet until tender. Add pea pods, peppers, mushrooms, and oregano. Cook 2 to 3 minutes or until vegetables are crisp-tender. Stir in grapes and pasta. Add salt and pepper to taste, and heat thoroughly. Variation: add cooked protein entree sprinkle with grated parmesan cheese.
