It's always better to be organized before you start cooking, but with barbequing, it's imperative. You must gather everything you will need before you begin cooking, because you shouldn't leave the grill unattended--for the sake of safety, and for the sake of perfectly cooked, succulent food. In addition to the main ingredient, you will need: dishes of salt and pepper for seasoning; whatever sauce you are using; a heat-proof basting brush, veggies you want to grill alongside, such as sliced onions and bell peppers; buns; a clean plate or platter to place the entree on when it's ready; and a long-handled metal spatula or pair of tongs. * Vegetables Take the Spotlight. Veggies are accustomed to playing the role of side dish in most meals, but at a barbeque, they can take center stage. They take on a satisfying, smoky sweetness when slapped on the grill, and almost any kind of vegetable is great for grilling. Round out the meal by serving them over pasta, rice or polenta. You can also make them into extraordinary sandwiches--try them on focaccia bread with goat cheese, or in pita bread with tzatziki sauce. Remember that most vegetarian foods are more delicate than meat, and do not contain as much fat. For these reasons, it's important to keep the grill clean and oil it well to prevent the food from sticking. * Drink Up! Soda pop is all very well and good but why not get a little creative at your next cookout! Lemonade is a grand summer drink; add a little something special to make it rise above the ordinary.
