White Asparagus

 

The white asparagus, long prized in Europe,

is the same plant as the green variety popular in America.

 

Growing the vegetable underground (usually by mounding

mulch on top) keeps the spears white.

 

The flavor is milder, nuttier, and less sweet than its

cousin grown in the USA.

 

The texture is often more tender.

Use it in any recipe that calls for green asparagus.
