Uniform Slicing And Cutting

 

Cutting foods into a uniform size and shape

is valuable to the visual presentation of dishes.

 

Perhaps more important to the success of the

recipe is the fact that it allows the ingredients

to cook at the same rate.

 

Example: If you add some carrots to a soup that

are 1/4-inch thick and some that are 1 1/2-inch

thick you can expect an uneven result.

 

One will either be overcooked or undercooked.
