Guest guest Posted May 26, 2003 Report Share Posted May 26, 2003 Homemade Dinner Rolls Route 66 Home Made Dinner Rolls 1/2 cup shortening 1/2 cup sugar 2 cups homogenized milk 1/2 cup mashed potatoes 1 cake yeast 2 Tbsp. warm water 2 eggs, beaten 4 cups sifted flour 2 Tbsp. baking powder 1 Tbsp. soda 2 Tbsp. salt 2 cups sifted flour Directions: Warm shortening, sugar and milk in saucepan until shortening is melted. Add mashed potatoes and cool. Dissolve yeast in 2 Tbsp. warm water and add to beaten eggs. Add this to the first mixture. Sift 4 cups flour with baking powder, soda, and salt. Stir liquid mixture into these dry ingredients. Put into large bowl and let rise in warm surroundings to twice bulk. This is a sponge. Cover overnight with light cloth. The next morning add remaining 2 cups of sifted flour to the sponge and knead until satiny. Put the dough in a greased bowl and let rise in warm surroundings. Knead on lightly floured board. Form into rolls. Preheat oven 425 Place these rolls on a greased pan and let stand 5 minutes in warm surroundings until double in size. Bake 15 minutes Serves 10.
