Nobody likes eggplant in my house anymore!If you like olives, they would probably be good in this too. 2 large eggplants 1 med onion 1/2 lb mushrooms 2 med zuchinni 3-4 garlic cloves 2 med tomatoes 16 oz tomato sauce 2 tsp italian seasoning mix 4 Tbsp parmesean cheese 1 Tbsp oil Peel and cube eggplants, chop onion into 1/2 inch pieces, peel, seed and cut tomatoes into 1/2 inch pieces, peel and chop garlic finely (or use press). Cut zuchinni in 1/2 inch pieces, peeling if desired, cut mushrooms into quarters. In oil brown the eggplant for about 5 min. Add additional veggies, except tomatoes, and cook about 10 mon till tender. Add spices, tomatoes and sauce, simmer about 5-10 min. Sprinkle top with cheese and cover, turn burner off and let sit for about 5 min to allow cheese to melt. Serve with salad and whole wheat pitas.
