It also combines fresh spinach, crisp green lettuce and tart pomegranate seeds, which are cholesterol free and a good source of the antioxidant vitamin C. INGREDIENTS: 3 c Spinach leaves, chopped 2 c Leafy green lettuce, torn 1 T Olive oil 1/4 c Pomegranate seeds 2 T Lemon juice 2 T Pine nuts Ground pepper, to taste PREPARATION METHOD Chop spinach and lettuce into bite-sized pieces; combine in a salad bowl. Drizzle with oil, season with pepper, toss to mix. Sprinkle with pomegranate seeds, lemon juice, and toasted pine nuts, if desired (toast pine nuts in skillet over medium heat until golden brown, tossing constantly). Makes 4 servings.
