Guest guest Posted June 10, 2003 Report Share Posted June 10, 2003 Twice-Baked Mushroom Potatoes 3 Baked potatoes 1-Tablespoon Butter 1/2 cup Mushrooms, sliced 1/3 cups Cream cheese 3 Tablespoons Sour cream 2/3 cup Swiss cheese, grated Directions: Pre-heat the oven to 375. Melt the butter in a skillet. Add the mushrooms and cook until soft. Cut the potatoes in half. Scoop out the flesh. Add the remaining ingredients and mash. Refill the skins with the mixture. Place on a baking sheet and cook for 20-30 minutes or until lightly browned. Cheese and mushrooms add new dimensions to twice-baked potatoes.
