This is a big mistake made by many home cooks. Many people believe that if you increase the oven temperature, you can decrease the cooking time of a particular dish or food product. The fact is that most items need to be baked or roasted at the particular temperature suggested, because that temperature will ensure even cooking. You may be able to increase or decrease your oven temperature by 10 to 25 degrees, but not much more than that. The recommended temperatures are chosen to ensure that the interior of the baked or roasted item is cooked through at the same time as the exterior.
