Guest guest Posted June 25, 2003 Report Share Posted June 25, 2003 Chilled Beet-Cantaloupe Soup 2 lbs. beets or. equivalent canned cut beets Butter or Oil 1 medium Vidalia or sweet type onion, peeled, chopped 2 cloves fresh garlic, crushed, peeled, minced 1/2 t. salt 1/4 cup granulated sugar (to taste, optional) 1 cantaloupe, seeded Juice and zest of 2 fresh lemons 1 cup Fresh Orange Juice Cook and peel beets or use canned beets. Cut into quarters and set aside. Cook onion in 1 Tbsp. butter or oil until somewhat translucent. Add garlic for last minute. Do NOT brown garlic or it will be bitter. Puree onions and beets in food processor. Seed cantaloupe and scoop it out and puree it with the beets. Season with lemon juice and salt. Add orange juice and chill.
