Guest guest Posted June 22, 2003 Report Share Posted June 22, 2003 Peach Ice Cream 6 large, ripe peaches, peeled and stoned Juice of one lemon 10 fl ozs/280ml double cream 10 fl ozs/280mll full fat milk 2 eggs 6 ozs caster sugar Blanch the peaches for 30 seconds in boiling water to remove the skin. Whizz for a couple of pulses in the food processor and add the lemon juice. Whizz another couple of pulses. Beat the eggs and the sugar together until very light and fluffy. In a pan heat, but do not boil, the cream and milk. Pour the cream and milk over the eggs and sugar and mix well. Return the mixture to the pan and re- heat until the mixture coats the back of a wooden spoon. Remove from the heat and allow to cool.
