Guest guest Posted June 22, 2003 Report Share Posted June 22, 2003 Vanilla Ice Cream If it's vanilla ice cream it has to be creamy and rich otherwise what's the point. 2 eggs 4 ozs/110g caster sugar 6 fl ozs/170ml full fat milk 6 fl ozs/170ml double cream 6 fl ozs/170 ml whipping cream 1 vanilla pod Heat the milk and the creams and infuse the vanilla pod for 20 minutes. Beat the eggs and sugar together until they are light and fluffy. Remove the vanilla pod from the cream and then split the vanilla pod and remove the seeds from the inside. Add the seeds to the egg/sugar mixture and beat them in. Reheat the creams and milk until very hot but not boiling. Pour over the egg mixture and beat together well.
