Meals that can be eaten cold or at room temperature are ideal to make in advance, or dishes where the flavors need to marry. For instance, cold vegetable soups, such as the traditional Spanish gazpacho or a cold cucumber soup, are best made ahead. Grilled items, such as entrees, and vegetables, are terrific as part of a cold supper or in a big salad. Pasta dishes also are easy to make ahead and serve either warm or gently reheated. And, of course, casseroles are a great make-ahead meal if you're short on time.
