LINGUINE WITH TOMATO-PARMESAN SAUCE

 

4 tablespoons butter

1 clove minced garlic

2 cups heavy cream

2 large chopped, peeled and seeded tomatoes

1 bunch chopped green onions

½ cup good quality grated Parmesan cheese

salt and pepper to taste

1 pound cooked and drained linguine

 

Directions:

Saute the garlic for a couple of minutes in the butter.

Add the cream, tomatoes and green onions,

bring to a boil for 1 minute, reduce the heat

to a simmer and cook for 5 minutes.

Taste and season with salt and pepper.

Add the cooked linguine and toss.

Heat for 1 minute.

Add the cheese and toss.

Heat for 1 more minute.
