Guest guest Posted June 30, 2003 Report Share Posted June 30, 2003 Corn and Pepper Saute 4 serving: 1 each red and green pepper 1 tsp each olive oil and butter 1 ½ cups frozen corn kernels 1/3 cup finely chopped green onions 1/4 tsp finely minced garlic 1/4 tsp. Ground cumin, optional Salt and Pepper To Taste Directions: 1)Cut the peppers into thin strips. There should be about 2 cups. 2) In a large skillet, heat the olive oil and butter over medium heat. 3) Add the peppers, corn and onions. 4) Sprinkle with the garlic, cumin, if used, salt and pepper. 5) Cook, shaking skillet occasionally, 6 to 8 minutes or until heated through and pepper strips are tender-crisp. ===== *********** My Special Thought To You: There's A Blessin' In Pressin'....On The Upward Way!
