Guest guest Posted July 2, 2003 Report Share Posted July 2, 2003 Mushroom and Red Pepper Pilaf For 4 servings you will need: 1 cup converted or long-grain rice 3 tbsp. Butter or margarine ½ lb. Mushrooms, sliced ½ cup finely chopped onion 1 red pepper, sliced or chopped 2 cups vegetable broth ½ tsp. Salt, optional Freshly ground pepper Directions: 1) Melt 1 tablespoon butter in a medium saucepan. 2) Saute the mushrooms for a few minutes over high heat. Remove mushrooms. Set aside. Save any pan juices and mix with the broth. 3) Melt remaining butter in the saucepan. Stir in the onion. 4) Slice or chop the pepper. Add to the onion. 5) Saute mixture until onion is softened. Stir in the rice, broth and salt, if used. 6) Bring to a boil. Lower heat to a simmer. Cover. 7) Cook for 20 to 25 minutes until the liquid is absorbed. 8) Stir in the sauteed mushrooms.
