Recipe from The Banana Lover's Cookbook, ©1993 by Carol Lindquist. 1/2 cup orange juice 16 marshmallows(vegetarian) 1 cup lowfat vanilla yogurt 4 large ripe bananas, cut in chunks 30 graham cracker squares Directions: Place orange juice and marshmallows in container of an electric blender. Cover and blend on high speed, scraping down when necessary. Add yogurt and banana chunks. Cover and blend again on high speed, about 30 seconds until smooth. Arrange 15 graham crackers in a 9- x 13- x 2-inch pan. Pour half of banana mixture over graham crackers. Repeat with remaining graham crackers and remaining banana mixture. Freeze until firm. Cut into squares. Makes 12 Servings. Per Serving: 164 Cal; 2 g Total Fat (1/2 g Sat Fat); 35 g Carb; 1 mg Cholesterol; 122 mg Sodium; 3 g Protein; 1 g Fiber.
