Guest guest Posted July 4, 2003 Report Share Posted July 4, 2003 Diabetic Applesauce Muffins Number of Servings: 12 Serving Size: 1 muffin unsweetened applesauce 1 1/4 cups --- egg 1 ea --- canola or corn oil 2 Tbsp --- honey 1/4 cup --- whole-wheat flour 1 cup --- all-purpose flour 1 cup --- baking powder 2 tsp --- baking soda 3/4 tsp --- cinnamon 1/2 tsp --- nutmeg 1/4 tsp --- raisins 1/3 cup --- Preparation Instructions 1 In a large bowl, beat together the applesauce, egg, oil and honey. 2 Sift in the dry ingredients; stirring just to moisten. 3 Stir in the raisins and divide the batter among 12 muffin cups coated with nonstick cooking spray. 4 Bake at 375 degrees F. for 20 minutes.
